Aeromexico is a relatively safe airline. It has a good safety record, with no fatal accidents in the past 30 years. However, the FAA downgraded Mexico's safety rating to Category 2 in May 2021, which means that Mexico's civil aviation regulator, AFAC, does not meet ICAO safety standards. This means that Aeromexico is not subject to the same level of oversight as US airlines.
Despite the downgrade, the FAA still allows Aeromexico to fly to the US. This is because the FAA has concluded that Aeromexico's own safety practices are sufficient to ensure the safety of its flights.
